The goal is to relax. Since coming back from vacation, I have realized how stressed out I have been the last few years. Now I have the opportunity to create a more easygoing lifestyle, and I am going to take it. Today we worked in our garden- something I have not had energy to do for a long while. This last winter, our plans were put aside as I struggled to just make it through each day. But the time has finally come where I can take care of the things most important to me: my family, our land, and enjoying life.
We have a lovely little pool-side garden with herbs (mint, thyme, basil, rosemary, lavender, chives, cilantro, valerian, etc), greens (kale, chard, cabbage, lettuce), sweet peas, sunflowers, carrots, tomatoes, a cucumber teepee, and fruit trees.

And we started 4 flats of seedlings to plant in our revised garden area/chicken coop! More tomatoes, bell peppers, hot peppers, chard, eggplant…
We just need to retrofit the old area so that it is animal proof- we have lost too many plants and animals to the coyotes, squirrels, rabbits, gophers, birds, and other animals that live here. We are going to create three terraces, lay down wire, and plant in potting soil bags directly on top. Then we can either take the bags with us if we need to move before next season, or dig them into the soil next season when we expand the garden.

We love eating from the garden- it saves money, tastes better, and gets the kids to eat more veggies.
After working in the garden, cleaning/organizing for hours, and a thousand other tasks, I was hun.gry.
Breakfast was Katz GF challah french toast with Kerrygold butter and chai tea.
Lunch was a huge mixed green salad with cranberries, feta, candied pecans, and homemade balsamic dressing and homemade mango Kombucha.
Dinner was brown rice pasta with homemade sauce (ala my MIL’s family recipe), bison/wild boar meatballs, and broccoli.



Dessert included homemade coconut milk strawberrry ice cream.  Yum.



Snacks included liberal amounts of homemade strawberry and cream gummies, sour watermelon gummies, and honey marshmallows. Links and reviews to come soon.
